Cabbage

I don’t like raw cabbage at all. If you like raw cabbage, you can make amazing cheap salads using cabbage as a base. During the colder season, all the other greens are usually quite pricey. You can store cabbage for a very long time in a cool place or in the fridge.

Sauerkraut

I love sauerkraut. You can make sauerkraut at home easily. You will be able to use up a large amount of cabbage in minutes. I chop up the cabbage thinly, press it into large jars, fill the jars up with drinking water, and add a little salt. Cover it with a not too tight lid. The lid will keep the dust away, but the air should be able to circulate. I let the cabbage sit at room temperature for a couple of days. When it’s all fermented and tastes like sauerkraut, I store it in the fridge for weeks.
