Carrots

I always buy carrots by the case simply because I truly love carrots. I eat quite a few carrots almost every day. I also have some some recipes for those, who are not so much into raw carrots.

Salads

Shredded or spiralized carrots are the perfect addition to a salad. I also love salads made with just with carrots and a rich dressing. Or carrot noodles with nut butter or tahini-based dressings.

Crackers

I use carrots in many bread and cracker recipes. I have one great carrot bread recipe in the recipe section of this book.

Juice

Carrot juice is, of course, an easy way to use up lots of carrots. I don’t juice for now, but if you do, try juicing carrots with some apples. The juice will taste milder and sweeter.
