Semi-Raw Foods

Some ingredients are popular in the raw food kitchen without being really raw as they undergo heat treatment at some point of the production. I’m not saying eating heated or cooked foods is unhealthy, but it’s a technicality one should know about when making a raw dish.
The following non-raw ingredients are often used in raw vegan restaurants.

kelp noodles, miso, soy sauce, tempeh, coconut sugar, maple syrup

These ingredients are likely heat treated

mangos, spices, frozen vegetables, nut butters, agave, olives, oils, nuts, frozen veggies
