Shopping
Every health food store or organic supermarket sells organic lentils and chickpeas. I do not worry about them being raw, I always sprout them before consuming and if they sprout, they are raw enough for me.
Eating
Lentils have to be sprouted before consuming, otherwise, they are as hard as a stone. I soak my lentils in water overnight. In the morning, I rinse them and let them sprout in a strainer for a few more hours and rinse them once again well before eating. I eat lentils in salads, for example with lettuce, tomatoes, and soy sauce. Sprouted chickpeas are great for making hummus.
