Greens are usually the freshest at the farmers’ market. One exception I found to be romaine hearts.

Storing

I store lettuce and other greens in the fridge in a damp organic cotton bag. I store kale in a little water in the fridge. Stalks freshly cut, just like I would keep cut flowers in a vase. Greens have different life spans. Romaine hearts and kale last longer than leafy greens.

How I eat greens

Mostly in a mixed salad with veggies and a nut-based dressing. I also love adding greens to smoothies and soups.
