RAW VEGAN GYROS

It only takes minutes to make gyros from scratch. You will have to wait over night for the dehydrator to do its work, but it doesn’t count, right? Minimal clean up, you will have to clean your blender only once at the end!

It only takes minutes to make gyros from scratch. You will have to wait over night for the dehydrator to do its work, but it doesn't count, right? Minimal clean up, you'll have to clean your blender only once at the end!
      Knife, Blender, Peeler, Dehydrator

Wraps

1 yellow, organic
tomato
1 organic
zucchini, peeled, keep the peels
2-4 tblsp raw, organic
flax seeds
to taste raw, organic
coconut vinegar
Blend all the ingredients till smooth, spread on the baking paper evenly, try not to make any holes. Experiment with the thickness, if you are dehydrating wraps for the first time make 3-4 different ones to find out what you like best. Dehydrate for 8-12h at 105°F/41°C, or bake it in your oven at a very low temperature with door slightly open to keep the ingredients “raw”. If the wraps turn out to dry, you can rehydrate them by sprinkling them with a very little water, they will get softer again.

Gyros Meat

1/2 cup raw, organic
walnuts
1 red, organic
tomato
1 organic
zucchini
1 saved ones
zucchini peels
1 tbsp organic
phyllium seed powder
1 red, organic
bell pepper
for color organic
paprika powder
to taste dried, organic
spices, (parsley, chilli pepper, basil, black pepper, cinnamon, oregano, sage, onion, garlic, bay leaf)
for decoration and taste organic
smoked paprika
2 gloves fresh, organic
garlic
Blend all the ingredients but smoked paprika, place on the backing paper sheet forming gyros like pieces, make 2 sheets with thicker and one with very thin peaces, or you can just spread the mixture and cut it later to safe space. Sprinkle with smoked paprika powder. Dehydrate or 10-14h on 105°F/41°C.

Sauce

1/2 cup raw, organic
pumpkin seeds
to taste fresh, organic
dill, chopped
to taste dried, organic
spices
1/4 organic
lemon, juiced
Blend all the ingredients but dill. Add chopped dill, keep refrigerated.

Filling Besides the Meat and the Sauce

Tomatoes, sliced
Cucumbers, sliced
Onion, sliced
Lettuce, washed & dried
The steps are very easy: 1. Wash, cut, and blend, using the same blender, if you blend sauce, wrap, gyros in this order you don’t have to clean your blender in between. 2. Store the sauce in the fridge, dehydrate the wraps and the gyros overnight. 3. Put the wrap together and enjoy.
