POTATO SALAD

THIS IS AN AWESOME RAW VEGAN POTATO SALAD

DO I HAVE TO EAT RAW POTATOES? NO! NO WORRIES

potatoes can be substituted easily by cauliflower, we will dehydrate it slightly

THE RECIPE

serves one person, my husband doesn’t eat cauliflower

POTATOES

cauliflower, twice as much as you need for your salad, cut, dehydrated (3-4h)

QUICK PICKLES

1-2 cucumbers, peeled
lemon juice, freshly squeezed
raw vinegar
fresh dill, chopped
mustard powder
coconut nectar (or other raw sweetener)
water
toss the cucumbers and let them sit for at least 20 minutes

MAYONNAISE

brine from our pickles, or if you are not making them: water, lemon juice, raw sweetener, mustard
fresh young coconut meat of 1 coconut

start with a little brine, just to get the blender started and add all the coconut meat
blend in a high speed blender till smooth and creamy
add more brine if too thick
if its too runny, you added to much brine, add more coconut meat if you have some or a little nut butter

OTHER INGREDIENTS

quantity to taste and availability
red bell pepper, diced
radishes, cut into half-moons
onions, diced
apple, peeled and diced
dill, chopped
celery, diced
bell pepper, cut into stripes, dehydrated for 2-3h at 105
tomato, cut into stripes, dehydrated for 2-3h at 105

COMBINE

combine all the ingredients
add some celery salt (recipe link down below)
enjoy it with some pickled tomatoes or sauerkraut (recipe link down below)
