Green Goddess Salad with Raw Vegan Avocado Mayonnaise Dressing

This mayonnaise recipe is so simple and guilt-free.
      Knife, Blender    

Salad Ingredients

1 head fresh, organic
lettuce, washed, dried
1 cup yellow, organic
cherry tomatoes, cut in halves
to taste fresh, organic
parsley, chopped
Cut the lettuce as small as you desire.

Avocado Mayonnaise Dressing Ingredients

1 cob fresh, organic
sweet corn, kernels cut off the cob
1 cup yellow, organic
1/2 organic
lemon, juiced
1 ripe, organic
avocado, peeled and deseeded
Yellow tomatoes work much better in this recipe than red tomatoes keeping the color of the mayonnaise nice yellowish. Blend all the ingredients in a blender until smooth and creamy.
Toss the dressing with lettuce in a bowl and plate. Decorate with tomatoes and parsley.

How to Prep Kale

Get the Freshest Organic Kale Possible

​your health food store or your farmers market has some awesome kale for sure
avoid pre-cut and pre-washed kale if you can
as with all greens (or any food) i only buy organic

wash your kale in a big bowl
take it out
dry it (watch the video for my special technique)
remove the leaves from the stems (watch the video for my special technique)
rip up the lettuce leaves
use them like this
massage them to make them soft and juicy
now they are ready for my to-good-to-not-be-famous kale salad
